The appropriate first meal in Oaxaca is brunch at Boulenc, the city’s most famous bakery and restaurant. You can grab a coffee and baked good to go (the pastries and Mexican breads are legendary), or sit at the restaurant, which is located in an old colonial building (but almost always has a long wait—so go when it opens!)

The most famous restaurant in Oaxaca, from lauded Mexican chef Enrique Olvera (who runs CDMX’s Pujol). Come for dinner—when you can enjoy a set menu of locally inspired dishes on the atmospheric terrace—as well as breakfast.

Six-seat omakase restaurant that implements local produce into dishes like ikura nigiri and yuzu clam sashimi. Reservations must be made months in advance. Crudo has a larger space next door with a bar, where you can dine if you can’t get into the original restaurant.
