South Korean chef Esu Lee has a strong resume in Paris: he was the man behind the now-closed but very popular C.A.M. Import Export and he did a months-long residency at Mokoloco. He's now running the show at Jip, a fun spot that serves three-course tasting menus featuring dishes such as sashimi with fermented prune, guanciale and capers and black pepper noodles “au poivre,” starring chicken broth and caramelized onions.
